Vintage Copco pan for Danish Æbleskiver / ebleskiver. store Cast Iron with enamel for Danish "pan cake balls". Retro - Design Michael Lax
This charmning old Copco pan was made for one thing, and one thing only: Danish Æbleskiver. Danish æbleskiver (sometimes referred to ebleskiver) is a pancake-like ball, which is baked in a special pan with holes - the very kind you can buy in this listing :) Æbleskiver is made at Christmas time in Denmark, but they taste delicious all year round. "Æbleskiver" means appleslices, and the name refers to a time where Danes would cook them with apple slices in them. Today the majority is "just" dough (like a pancake) eaten with marmelade and sugar.
This pan is of high quality, made by the Danish brand Copco in the 60s. Copco was called Nacco at the American Market. It is very heavy cast iron with perfect shiny enamel.
The pan was designed by Michael Lax.
